Buttermilk-Banana Waffles

– 1 ¾ cups all-purpose flour – 2 tablespoons sugar – 1 teaspoon baking powder – ½ teaspoon baking soda – ¼ teaspoon salt – 2 eggs, lightly beaten – 2 cups buttermilk or sour milk*


– ½ cup vegetable oil or melted butter – 1 teaspoon vanilla – ½ cup chopped banana

Step 1: In a medium bowl, combine flour, sugar, baking powder, baking soda, and salt. Create a well in the center of the flour mixture.

Step 2: In another medium bowl, mix eggs, buttermilk, oil (or melted butter), and vanilla.

Step 3: Pour the batter onto a preheated, lightly greased waffle baker following the manufacturer's directions (use a regular or Belgian waffle baker).

Step 4: Lay the cooled waffles in a single layer on baking sheets and freeze for 1 to 2 hours or until firm.

Step 5:  To serve, preheat the oven to 300°F. Place frozen waffles on a baking sheet and bake for about 15 minutes or until they are warm and crisp.
